Our Spicy Peanut Dressing recipe awakens taste buds with fresh ginger and chili paste (like Sambal from Indonesia). This one is great for salads or grilled mixed veggies.
Yield 1 1/2 cups
Ingredients:
- ½ cup peanut butter
- 1/3 cup low sodium soy sauce
- 2 Tablespoons rice vinegar
- 2 Tablespoons chili paste (Sambal from Indonesia is tasty)
- 2-3 Tablespoons sugar, honey, or agave
- 1 small knob fresh ginger, peeled
- 1 clove fresh garlic, peeled
- ¼ cup water
Directions:
- Combine all ingredients in a blender or food processor.
- Blend until smooth and creamy.
- Refrigerate leftovers for up to seven days.
Use to add flavor and nutrition to salads, roasted or grilled vegetables, chicken or tofu.
