These coconut berry popsicles combine the creamy texture of coconut milk with the vibrant flavors of strawberries and blueberries, making for a delightful and refreshing treat!

Ingredients

  • 1 cup pureed strawberries (about 1 pint)
  • 1 cup pureed blueberries (about 2 cups)
  • 1 cup canned coconut milk
  • 3 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract
  • 12 wooden popsicle sticks

Directions

  1. Prepare the Purees:  Put the strawberry puree in one bowl and the blueberry puree in another.
  2. Prepare the Coconut Milk Mixture:  In a separate bowl, mix the coconut milk with honey or maple syrup and vanilla extract until well combined.
  3. Layer the Popsicles:  In each mold, muffin cup, or paper cup, alternate layers of strawberry puree, coconut milk mixture, and blueberry puree. You can swirl the layers with a toothpick for a marbled effect if desired. Steady the paper cups by setting them in a small, square pan. If using molds, set the lids in place and insert the sticks in the slots. Freeze until firm, at least 3 hours. If using muffin tin or paper cups, partially freeze for about 1 hour before setting the sticks in the center of each cup. Freeze until firm, at least 3 hours; unmold and let soften at room temperature for 3 to 4 minutes before enjoying.
