Serves 4

Ingredients:

  • 1 bunch fresh onion chives
  • 1/4 cup pumpkin seeds / pepitas (toasted)
  • 1/4 cup extra virgin olive oil + more as needed
  • 2 teaspoon lemon juice or red wine vinegar +more to taste
  • 1 teaspoon water

Directions:

  1. Add the nuts to a skillet and turn on the heat to medium. Toast them for a few minutes until just golden. Watch them closely and move them around with a spatula so they don't burn. Allow to cool.
  2. Add the chives, toasted pepitas, olive oil and red wine vinegar to the bowl of a food processor. Process until a rustic texture is achieved. Add more olive oil or some water if needed to loosen up the pesto sauce to your liking. Season to taste with sea salt.
