Apple & Feta Kale Salad with Honey-Garlic Vinaigrette Dressing

The sweet apple and tangy feta flavors bring out the best in this salad's cruciferous vegetable, kale. Simple to make and easy to enjoy, this healthy salad is a great addition to any meal.

Directions:
- Make the dressing: combine oil, vinegar, salt, honey, and garlic. Shake then allow to sit for at least 10 minutes to let flavors combine.
- Prepare the kale leaves: rinse, remove thick middle stems and chop into strips.
- Chop apple and green pepper into bitesize pieces. Add to kale.
- Toss salad in dressing and enjoy!
